Sourdough Discard Recipes

Sourdough discard is the unfed starter you scoop out before a feeding, and it is far too good to throw away. It will not raise bread on its own, but its mild tang and moisture make it a wonderful ingredient in quick bakes. These three recipes are the easiest, most-loved ways to use it up: fluffy pancakes for breakfast, crispy crackers for older and tangier discard, and a moist banana bread for a jar of fridge discard and a few brown bananas. Each uses about 1 cup (240 g) of discard and gives real quantities in both grams and cups. New to discard? Rule of thumb: discard replaces equal weights of flour and water in any recipe, so a 100 g scoop of 100% hydration discard stands in for 50 g flour plus 50 g water. Keep a dedicated jar in the fridge and it holds for about a week.
